Easy Apple and Cinnamon Vegan Cake
Would you like to include more plant based meals into your diet or simply like to whip up something for your vegan friends but find the idea daunting? We would like to show you that its easier than you think, starting with this sweet and easy recipe.
We wanted to share a cake at the office today but one of the collaborators is vegan. We thought this was a great opportunity to experience vegan cooking and in turn share the experience with you.
Easy Apple and Cinnamon Vegan Cake

- To make the apple sauce : in a saucepan combine the peeled, cored and chopped apples with cinnamon, vanilla and water. Cover and cook over medium heat for 15 to 20 minutes until apples are soft. Then mix it all.
- Preheat the oven to 220°F
- Square 8- inch cake pan, line with parchment paper and grease bottom and sides of the pan.
- Mix the dry ingredients together except sugar : flour, corn starch, baking soda, and salt.
- In a different bowl whisk oil and sugar together for about 2 minutes and add apple sauce. Mix it well.
- Add the dry ingredients to apple mix and mix it together gently making sure all the ingredients mix together well.
- Pour the mixture to cake pan and bake around 25 to 30 minutes until cake begins to pull away from sides and/or toothpick inserted in the center pulls out clean.
- Let it sit for about 30 minutes bring to room temperature and slice the cake into pieces.
- Before serving lightly dust with coconut shaving.
NB : I decided to bake it with fresh apples making a homemade apple sauce but you can purchase pre made apple sauce for faster results. It will take you only 10 minutes to prepare and 25 to 30 minutes to cook.
With such a recipe, it's hard to believe that this is vegan, even our office chocolate lovers were convinced...
